FULL-ON DUCK MENU
For a full-on duck menu, you can check out this one restaurant in Yilan, known for its distinct way of prepping its specialty. You can start off your meal with duck soup, and end your dining experience with a sweet taste of roast duck mochi.
Most of the restaurants serving roast ducks would have it served three ways, including sliced skin with flour tortilla, and bamboo shoot soup with duck. However, most have not tasted the golden fried mochi in sesame seeds and stuffed with roast duck.
The duck mochi is served with Yilan's famous San Xing scallions for a sweet and salty taste.
The duck can also be made into Nigiri sushi without the spicy wasabe, but with cheese.
Before roasting the duck, the chef would need to massage the duck meat first and stuff the duck with herbs, including star anis, ginger before sealing it.
The duck needs to be blanched before roasting for an hour over medium heat, for the herb to infuse into the meat while draining the fat out to make the skin golden crispy, which is then ready to be served in 4 ways.
