THE MUST-EAT SQUID SOUP IN YUNLIN
Next we are taking you to Yunlin to taste the famous delicacy, called the squid stew. The squid is first boiled and then simmered with the special broth.
With the chewy texture, the stew has become a must-eat dish around the neighborhood.
A dash of pepper is added to the fresh, sweet squid stew to boost its natural flavors.
Five bite-sized squids from the South Pacific are added to the bowl and then served.
The squid is elastic, crunchy, and tender, while the stew is prepared from a broth base with tofu, minced garlic, and soy sauce.
After the mixture boils, the proprietor adds cabbage, onions, enoki mushrooms, and wood ear to the pot for flavor.
The stew contains no MSG, and dashes of cornstarch, salt, and egg are added right before serving.
The squid, meanwhile, is blanched for just ten seconds to maintain its original texture.
It is no surprise that the eatery has built up a loyal customer base in just one year.
