THE GOOD TASTE THAT LASTS FOR 30 YEARS
It's not the shredded chicken rice of Chiayi that's getting our attention today, but we are taking you to this traditional eatery, that serves sticky rice steamed in a container made of Formosan cypress.
The secret lies in the cooking process and in its special meat sauce, making the dish one of the most popular snacks in Chiayi for over 30 years.
The steaming glutinous rice is served with two spoonfuls of a delicious minced meat sauce.
The rice is elastic and chewy, and its special texture is perfectly offset by the rich flavor of the brewed pork. The proprietor leaves space within the rice so that the sauce can seep into it, and every bite is flavorful.
The dish is prepared by pouring glutinous rice that has been soaked in water into Formosan cypress tubes.
During the steaming process, steam enters through the natural pores in the cypress and not only cooks the rice, but infuses it with the light, fragrant aroma of the wood.
The proprietor says that he prepares the dish as his father prepared it before him, and that glutinous rice prepared this way has a special texture.
The eatery has been in business for 30 years, and has an extremely loyal customer base.
Diners can be found lining up outside throughout the day, and the establishment has become one of Chiayi's most famous restaurants.
