Rice Noodle Hot Pot with Crabs

The steaming crab vermicelli pot is perfect on cool autumn days. Green crabs are currently in season, and the combination of fresh crabmeat, seafood broth, and chewy Hsinchu vermicelli is absolutely irresistible.
Many say that green crabs are more delicious than hairy crabs, and the fresh seafood broth contains no MSG or artificial seasonings.
The pot is prepared by first stir-frying scallions and garlic, and then heated in the soup base for ten minutes.
After the broth is poured into the serving pot, cabbage, Hsinchu vermicelli, and crab are added.
