Diy Rice Noodles
Hsinchu is known for producing rice noodles which are widely used in Asian cuisines. Here on CTS, let's go behind the scene, where a factory owner is open to share the traditional method of making rice noodles.
As they watch the rice vermicelli appear from the machine, the children can't wait to make their own vermicelli. The owner of this century-old rice vermicelli factory recently decided to open his plant up to the public to help everyone understand how vermicelli is made, and allow visitors to try their hand at making their own vermicelli.
Over the years, the couple that runs the factory has remained committed to producing handmade, 100% rice vermicelli. As a result, the vermicelli has the light, fragrant aroma of rice. The factory has been in the family for three generations, and the traditional process used to make the vermicelli is time-consuming and labor-intensive.
After the rice to be used for the vermicelli is selected, it is ground into powder and steamed until solid. Afterwards, the vermicelli is dried in the sun. The entire process takes two days, and workers have to carefully monitor weather conditions to ensure that the final product has the right texture.
In terms of production quantity, the factory can't compete with automated factories, but the owner hopes that opening his plant to the public will allow this traditional skill to be passed on to the next generation.
