Twn's Banquet Chef Passed Away
Lin Tian-sheng, who is referred as the nation's most celebrated chef in the banquet catering industry, has passed away at the age of 78 years old.
The Tourism Bureau has started an oral history project about the master's life to preserve the know-how regarding the traditional hospitality.
Taiwan's banquet catering king, Lin Tian-sheng, was always as prepared as he could be and never left anything to chance.
He had a set procedure for every step in the catering process, and all of his ingredients were always fresh and purchased on the day of the banquet.
In order to ensure the quality of his dishes, Lin never considered cost.
Whether he was catering birthday celebrations or wedding banquets, Lin always had a chopstick arrangement at the center of the table.
Cutlery and dishware, meanwhile, were placed on the table depending on the type of event.
Lin began apprenticing with a chef at the age of 12, and eventually incorporated the inter-inhibition of the five elements into his process.
The 78-year old chef was diagnosed with colon cancer and began undergoing chemotherapy earlier this year, and was believed to have been in recovery.
He unexpectedly passed away on November 1st. Lin's son, who trained under him, says that he hopes to open Taiwan's first banquet catering restaurant to ensure that his father's art is passed on to the next generation.
