Milkfish is not only delicious, but also low in calories, rich in protein and DHA, highly nutritious, and inexpensive.
Distributors in Taipei say that it is extremely difficult to make a living selling milkfish due to low prices and supply exceeding demand.
Milkfish is the second most commonly bred fish in Taiwan after breams, and milkfish aquaculture farms account for more than 7,000 hectares of land.
Because milkfish often have more than 200 bones, many consumers prefer other types of fish.
The aquaculture community has therefore had to develop different processed product lines, including vacuum-packed fish maw, fish balls, fish floss, and even sausages.
Breeders say that they are lucky if they can earn 100,000 NT on a one-hectare tank of milkfish every eight months, and that they hope that consumers in Taipei can help expand their market.
