The carps, which are large enough to feed 20 people, are first deep-fried to lock in the sweetness of the meat.
When it has turned the perfect shade of golden-brown, it is taken out and braised with scallions, ginger, and soy sauce for ten minutes until the liquid in the pot has evaporated.
As the carps grow relatively slowly, they are only available in limited quantities.
