This dish is called "Braised Chicken Hotpot from Guizhou."
Sauteed pieces of drumsticks are first simmered in a sauce made from dozens of different Chinese herbs for more than 10 hours and then cooked together in chicken broth along with a specially made spicy sauce.
The dish features the authentic taste of Yunnan and Guizhou.
The secret to its deliciousness is the spicy sauce, made from over 20 spices, including cinnamon, cumin, cardamon, clovershurb and many more.
It's based on an original recipe from Yunnan.
Besides the chicken hotpot, another bestseller in the restaurant is the fish in sour soup hotpot, which uses Taiwan tilapia.
The fish tastes fresh and succulent with a bit of black vinegar.
